If You’ve Broken The Eggs…

My dear friend Meaghan who just finished law school (so pound of you lady!!!) was over for dinner and wine the other evening. We had very spicy pasta with an extra helping of red wine and she made the most decadent appies I have had in a long time. They were baguette with tomato, prosciutto and black pepper goats cheese toasted in the oven until they were crusty and hot. I wish I had a picture to share with all of you! Delicious. The next day I had all of this left over so I got to thinking what can I do with goats cheese and prosciutto besides making a wonderful salad. As it was mid morning and my roomie sister and I were hungry, an omelette seemed like the most obvious option. Eggs, a little milk and a lot of pepper whisked into a frenzy. Crispy prosciutto, goats cheese, onions and tomatoes delicately folded in the middle. Success! A little rich but that’s ok, it’s good to be indulgent every time and again! At least that is what I keep telling myself…
